Just call me the queen of pumpkin spice because it is getting all pumpkin pie spice up in my house this weekend! I have been waiting for the cold weather so I can pull out my favorite sweaters, Netflix (Madame Secretary is a must-watch) and my faux sherpa blanket so I can do fall as only I know how. I’m also putting away the ice cream and pulling out my coffee maker so I can start making my usual fall favorites, from lattes to espresso to today’s recipe: my favorite fall cappuccino and the mug cake I’ve paired it with!

Pumpkin Pie Spice Double Duty: Pumpkin Pie Spice Cappuccino and Mug Cake Recipes

Pumpkin Pie Spice Double Duty
Here’s what you’ll need: two of the biggest, baddest mugs you can find, a bag of Dunkin Donuts® Bakery Series® Vanilla Cupcake coffee, and a can of International Delight® Coffee Creamer in (you know it) Pumpkin Pie Spice. Plus all the usual baking ingredients that make these mug cakes so delicious!

I start out with making the cappuccino first. Brew your coffee as you normally would and leave it to sit while you prepare the mug cake. I prefer my mug cakes to be a little moist so if you’re a fan of drier cakes, then add a few tablespoons more flour to your recipe.

Serves 1          |         Total cook time: 5 minutes



-1/4 cup of flour (I used gluten free)
-1/4 cup of white sugar
-1/4 teaspoon baking powder
-1 pinch of salt
-1 tablespoon canola oil
-3 tablespoons International Delight® Coffee Creamer Pumpkin Pie Spice
-1/8 tablespoon vanilla
-1 tablespoon brewed Dunkin Donuts® Bakery Series® Vanilla Cupcake coffee


  1. Whisk flour, sugar, baking powder and salt together in a large buttered microwave safe mug
  2. Add canola oil, International Delight® Coffee Creamer Pumpkin Pie Spice, vanilla, and brewed Dunkin Donuts® Bakery Series® Vanilla Cupcake coffee to mug and mix everything together
  3. Microwave for two minutes. Microwave for an additional 30 seconds if needed
  4. Allow mug to cool for a few minutes and add chocolate chips and frothed milk if desired


And to finish everything off, I frothed up a cup of the International Delight® Coffee Creamer which I dabbed a bit onto my mug cake and saved the rest to pour into my cup of brewed coffee to create the perfect complimentary cappuccino!

Coffee is one of the top things I look forward to for fall and finding the perfect creamer to pair with it makes all the difference – trust me! I almost had a hard time picking just one flavor (I absolutely bought two). I found these at my local Kroger which had all the flavors to choose from!

I was able to find them in the coffee/tea aisles and in the section with cases of milk
