I don’t know about you but I love light, fresh recipes during summertime. During winter I eat a lot of heavy soups and warm meals but when summer hits, all I want is light, fresh and absolutely delicious! I’ve rounded up a few of my absolutely favorite and very easy skinny summer recipes that make for a great lunch or dinner and are easy to modify for a family or just cooking for one. And of course, what fresh and light meal isn’t complete without half a glass of white wine? None! Read ahead for my selection of recipes you need to try this week:
The Three BEST Skinny Summer Recipes
// SUMMERTIME SALAD
Combine mixed greens, sliced strawberries, blackberries, blueberries, chopped walnuts (candied if you prefer) and feta cheese. Top with a vinaigrette of olive oil, red wine vinegar, freshly cracked pepper and salt, basil and oregano for a light pairing. Add shredded prosciutto for a light protein. Serve with wine.
// PARMESAN PASTA
Cook a half box of gluten free noodles according to package and drain. Add in 1/4 olive oil and 2 tablespoons butter while noodles are on medium-low heat. Add in freshly chopped parsley flakes, crushed red pepper flakes, cup of parmesan cheese and 3 cloves of garlic. Stir to combine. Add a package of pre-cooked salad shrimp for light protein. Serve with wine.
// PROSCIUTTO, FETA, SPINACH AND EGG WHITE OMELETTE
Did someone say breakfast for dinner? Separate four egg yolks and freeze for another recipe. Blend for two minutes with a hand mixer for aerate the eggs for a more fluffy omelette. Pour into a pan and gently swirl. Layer in feta cheese, then spinach, topped by shredded prosciutto. Wait until a base to the egg forms and then gently flip one side over the other. Finish cooking over low heat. Serve with a mimosa. Or wine.
Can you tell how much I love wine during summer? Le sigh…I’ve already made all of these meals this week and they’re always a big hit! Definitely a big thumbs up in my book!
